Ingredients

2 Cups Iya’s Cassava Flour

¼ Cup Iya’s Tapioca Flour
300g Semi-Sweet Chocolate Chips
Two sticks (approx. 200g) of Butter softened
200g of Brown Sugar
3 Large Eggs
1 tsp Baking Soda
A pinch of Salt
Any chocolate spread
½ cup milk
Directions
Preheat the oven to 350F and line baking pan (a brownie pan or about a 9”pan) with parchment paper.
Mix (can use mixer) the sugar and butter until they become one i.e. soft and creamy. This step is the 1st thing I learnt about baking as a kid growing up in Nigeria. It all starts with the sugar and butter – put on some music and have fun mixing these two until it looks like soft cream.
Add eggs and mix gently for a few mins
Add flour, starch, baking soda, and salt – Mix until very soft pourable dough forms. Tip - When using cassava four – you want your dough to be slightly more runny that regular flour cookie dough
Gently fold in the chocolate chips or chunks
Pour half the dough into your sprayed or lined baking pan and spread into an even layer. Then spread the chocolate spread on top of 1st layer of the cookie cake dough. Last step - Spread the other half of the cookie dough on the chocolate spread so you have 3 layers which will likely mix while baking, awesome!
Bake for about 25 to 30 mins or until a clean utensil comes out almost clear – this recipe is moist so the utensil won’t be all clear – that’s good!
Allow to cool and serve with ice cream if you want
Some tips for home baking:
Don’t be too hard on yourself to get the exact look and picture in the recipe. The way I approach baking is ‘if the good ingredients go into the pan, good food is going to come out the pan’ so bake with love and enjoy your homemade desert whatever it looks like – you did great!
Cassava flour is an amazing wheat flour substitute that can substitute 1:1 but I like to do ¾:1 so my recipes are nice and fluffy. You can either do ¾ Cup Cassava Flour to 1 Cup wheat flour or increase your liquids i.e. milk, eggs, water or oil by 25% for example instead of 1 cup milk, use 1 ¼ cup milk
