Ingredients
6 namwa bananas (these are tropical bananas that are smaller). Can also substitute and use 1-2 plantains.

3/4 cup Iya Foods Tapioca Flour
1/4 cup rice flour
1/2 cup shredded coconut
3 tsp honey (less if you have super ripe bananas)
1 1/2 tbsp white sesame seeds
1/2 tsp salt
1 cup water + more if batter dries up
Vegetable oil for frying
Directions
Peel and cut the namwa bananas in half lengthwise. Set aside.
Mix tapioca flour and slowly pour water in to form a thick batter.
Add shredded coconut, sesame seeds, salt and honey (less if you have very ripe bananas or prefer less sweet). Stir in more water if batter seems dry.
Heat 1/2 inch of oil in a pan, enough for the bananas to submerge at least halfway.
Dip the bananas on both into the mixture. Fry them on each side until golden and crispy. Be careful not to overcook or burn. Use a slotted spoon to take them out to drain on paper towels.
